There's a raw place on 23rd Street near Madison Square Park called Bonobo's. They're not spicy at all, and since everything is raw, there's nothing fried. You can get a salad with a nut patty.
She might be able to get something at Candle Cafe (3rd Avenue and 75th Street), a mostly vegan cafe.
Teany, Moby's tea shop on the Lower East Side, has little sandwiches that might work.
